TASTING NOTES
Fruity aromas of brambly blackberry, black cherry, and ripe plum accent a hint of cacao. Acidity is rife with this lush, medium bodied and low tannin wine. Cassis and sweet spice notes open up to a lingering suppleness of chocolate and toasty oak flavors and an enduring finish.
Grown with a focus on sustainability. These grapes are farmed on nutrient rich soils, made up of a decomposed ancient sea bed. A properly managed, umbrella like canopy allows for just the right air flow and dappled sunlight onto the clusters to achieve maximum quality. The higher water holding capacity of these soils allow for fewer water applications throughout the season, and lends to the uniqueness of the wine.
Whole cluster carbonic maceration on Verona (39%) blended with open top fermentation for the Petite Pearl & Mourvèdre component. Malolactic fermentation and aging were conducted in neutral French oak barrels with the addition of a small amount of new American oak. Racked only once. Minimal sulfites added at bottling.
