TASTING NOTES
Kissed with just a touch of new French oak. This heritage style wine boasts melon, quince, & lemon curd flavors with a round, lush medium-light body. Subdued but present heady thiol notes include passionfruit and boxwood. Balanced by aging in neutral French oak for improved mouthfeel and texture.
WINEGROWING
Grown with a focus on sustainability. These grapes are farmed on alluvial soils mixed with larger volcanic strata. A properly managed, umbrella like canopy allows for just the right air flow and dappled sunlight onto the clusters to achieve maximum quality. The soils of the vineyard site enhances the expression of character for each variety and lends to the uniqueness of the wine.
WINEMAKING
Viognier was picked early to add fruitiness, heady floral aromas, and acidity. The Roussanne fermentation was kicked off in stainless steel but finished and aged in neutral French oak. Roussanne was allowed to complete malolactic conversion to add a bit of texture. Minimal sulfites added at bottling.
