TASTING NOTES
This experimental pear and red wine grape co-fermented cider has high acidity that hits the front and the back of the palate as flavors of prickly pear, hibiscus tea, and spicy pepper linger on the finish. Surprisingly complex with more body and tannin usually found in cider with a funky kombucha-like finish.
GROWING
Grown with a focus on sustainability and farmed on nutrient rich soils, made up of a decomposed ancient sea bed. The higher water holding capacity of these soils allows for fewer water applications throughout the season, and lends to the terroir driven flavors of the beverage. Exploring the symbiotic synergy between two different cold hardy fruits and the constant push to be more resourceful.
WINEMAKING
Previously pressed Teroldego skins were flooded with fresh estate grown pear juice. Punchdowns were employed twice daily and spontaneous fermentation kicked off without the addition of sulfites. Pressed again before completing fermentation to neutral French oak. Local wildflower honey was added to start a secondary fermentation in bottle with the addition of a light spritz.
