Spontaneously fermented with native yeast from previously pressed grape skins still containing residual amounts of sugar from the 2020 harvest. We perpetually upcycled our natural byproduct, by steeping the skins in carbon filtered water, adding a small percentage of Rosé wine after fermentation for stability. Fermented dry with a light, refreshing body, and minimal tannins.
